The origin of the Coca de Sant Joan has very ancient roots and is linked to pagan festivities related to the arrival of the summer solstice. Over time, these celebrations were also adapted to the Christian tradition to pay homage to the longest day of the year. Coca, as it is known today, became popular around 1900. Initially, it was consumed on this holiday, on the night of June 24. It was prepared at home and then taken to the bakers to be baked. At present, in honor of this tradition, Levaduramadre offers its Sant Joan cocas for the first time in its stores in Barcelona, Valencia and Alicante.
New Pistachio and Raspberry Coca: Exclusive Version
Levaduramadre has exclusively created the Pistachio and Raspberry Coca. Made with brioche dough, this coca stands out for its main ingredients: pistachio and raspberry. It is baked with pistachio pastry cream and decorated with pistachio praline, caramelized pistachios, freeze-dried raspberries and fresh raspberries. It is available from €14.95 in a small format and for €24.95 in a medium size.
Sweet tradition in six versions for all tastes
This year, Levaduramadre presents six versions of cocas to celebrate the festival of Sant Joan in a big way. These delicacies are made with high-quality ingredients and will be available in the store from June 16. However, all cokes must be ordered 24 hours in advance before picking them up at the store.
Among the options is the Coca de Fruta, prepared with a thin and delicate puff pastry dough, baked with pastry cream and covered with fresh seasonal fruit. There is also the Coca Músico, made with puff pastry and baked with pastry cream with a touch of citrus and lightly toasted nuts. Both versions are available in two sizes: small (€13.95) and medium (€22.95). In addition, Levaduramadre offers one of the most traditional cocas, the Coca de Llardons, which consists of a crunchy puff pastry base covered with pine nuts, pork rinds and sugar. This coke is also available in two sizes: small (€11.95) and medium (€19.95).
In the brioche dough version, Levaduramadre incorporates three types of cakes. The traditional Coca San Juan, made with a butter brioche base, traditional fruits, baked with pine nuts and pearl sugar. For lovers of cream, there is the Coca de Crema y Piñones, with a composition that includes brioche dough, pastry cream with a touch of citrus, pine nuts and sugar. These two cokes are also offered in two sizes: small (€11.95) and medium (€19.95). And as a third option in brioche dough is the aforementioned Pistachio and Raspberry Coke, an exclusive version of Levaduramadre
